Ingredients:
- 2 cups brown sugar, packed
- 1 cup light corn syrup
- 14 oz sweetened condensed milk
- 1 cup butter
- 1 cup semi-sweet chocolate chips
- 2 teaspoons vanilla extract
- Hope Provisions Co Finishing Salt, for topping
Instructions:
Prepare the Pan
Lightly grease a 9 x 13-inch baking dish. Line with parchment paper, leaving enough overhang on the sides to lift the caramel out later. Lightly grease the parchment and set aside.
Make the Caramel
In a medium, heavy-bottom saucepan, combine the brown sugar, corn syrup, and sweetened condensed milk. Bring to a steady boil over medium-high heat, stirring regularly, and cook for about 10 minutes.
Add the butter, chocolate chips, and vanilla. Stir until fully melted and smooth. Attach a candy thermometer to the side of the pan.
Continue cooking at a steady boil, stirring occasionally, until the mixture reaches 230°F. At this point, stir continuously to prevent scorching and cook until it reaches 240°F.
Remove from heat and carefully pour into the prepared pan. Spread evenly.
Finish
Let the caramel sit for about 10 minutes, then sprinkle generously with Hope Provisions Co Finishing Salt.
Allow to cool completely. For easier cutting, chill briefly in the refrigerator.
Lift from the pan using the parchment, then cut into squares with a lightly oiled knife. Wrap or store in an airtight container.
